I was wondering if anyone is running WITHOUT a thermostat and just using a restrictor plate instead? If so, size?

Any downsides to running this way, given my Challenge car is for track purposes only? Longer warm-up time.

Reason for the doing this is: 1) wanting to flush the engine non-running and 2) upgrade to an electric water pump.

IF I were to run an electric pump, I would be using an electronic controller to run variable speed at the pump and eliminate the thermostat with no restrictor. Basically the best of both worlds. Temp control with the benefits of electric.
