I'm into the dash wiring on my MK3.1 complete kit. It has the Ron Francis harness. I noticed that the RF instructions have one set of instruction and the classic gauge package from FFR has another set of instructions. Which one should I follow or do a use bits and pieces from each????

You're on the right track, you use bits and pieces of both. The two play well together. I would suggest figuring out how you are going to wire it an then write it all out. For example, you have to figure out how to wire in the inverter since it's not shown on the RF harness. It's not hard, just do a little planning.
