Okay, I would like to say 'I have a friend that screwed-up' but I am sure everyone would see through that and besides it was me - I screwed-up.
I am using a 7 quart oil pan. The dip stick goes through the side of the pan not the side of the block.
I installed the engine without fixing the hole where the dip stick should go. Out of the car this was an easy fix - could have tapped the hole and used a plug.
Now, it is a different matter, what is the fix of choice?
I could use a bolt that is close in size and some gasket sealer.
I could use a wood dowel rod and some epoxy.
I could use a cork.
Any comments?

Similar diameter bolt and JB Weld?

Just silicon a bolt into the opening.

It'll work great and nobody will ever spot it if you paint the bolt head the same as the block.

You probably have stuff to do this laying around in your garage.

NO biggie.

Okay, don't think this is too off-the-wall. If you have a friend in the air conditioning or refrigeration business, you can ask him for one of the little rubber plugs that are installed on new refrigeration tubing during manufacture. They come in 5/16" thru 1.25" and are really a slick little gizmo. They are almost solid, except for a hole that runs nearly the length of the plug. You simple stick an appropriately sized object into the hole and stretch the plug till it's long and skinny. You insert it into whatever you want to plug and remove the object you stretched it with, whereupon it expands to its original diameter. It'll hold 60 or 70 PSI and is impervious to lubricating oil. Also easily removable and almost invisible (it's black). I'd guess the 3/8" size would be perfect for a dipstick hole. Best of all is they're free. The service guys toss them when they use the tubing.

use the little freeze plug i did that when i rebuilt my 289 for my mustang works good sometimes ford does that already
