starting to think about initial tuning/setup for my EFI.
289 SBF w/ a 190* thermostat.
I was thinking 195* on an 185* off.
open to other ideas.

The only problem with those settings is the fan will run all the time. The 190 thermostat will hold the engine temp above the fan shut off temp. My thermostat is a 180 and I set the Sniper fan control at on 195 and off at185. Cruising on the highway the engine temp is steady at 180 and the fan is not running. As soon as I slow down the temp creeps up to 195 and the fan comes on. Depending on conditions it will cycle on and off as the temp moves between the two values.

I agree with Norm B. I'm running the Fitech with those exact settings. I'm using the Michimoto radiator and at speed, the car doesn't get above 175 F even on a 98 degree day. I literally had to sit in traffic on purpose to see if it would come on when programmed (much more fun than sitting in the driveway).

So maybe 205*on and 195*off?

That should work fine. With a 50% coolant mix and a good pressure cap you should be at least 55 degrees from boiling.
