How long should I let the body cure before working on it? And I assume I can dewax/grind seams/find (not fill) voids in that time?

Only FFR can answer that question, due to the time it leaves the molds and is "warehoused" by them till shipped to you is only known by them. A good average cure time would be 45 days in spring and fall in a non-airconditioned shaded plant area. While you're getting the chassis ready I would cure it for minimum two weeks in the good old bright sunlight with the buck just to be safe and while supporting the nose and rear overhangs.

I have done 2 of these things and found that if you grind and fill, just leave the body in direct sunlight as long as you can. The filler will shrink more than you think. We have some pretty powerful sun here in NM so maybe where you live it may take a little longer.

I have some new bodies at my shop, as well as some older ones. each one that I do, I wash the body thoroughly and cut it open with 180. grind the seams and fill them with vinylester filler. let it sit for a couple weeks like that before going forward. with the gelcoat "open" it will offgas considerably. I do the same with both new and old bodies. you can smell the resin offgassing once it is cut open. cheers, SRP
