It's been a while since my last update. Here are a few pics of my progress:
I built angled seat mount brackets with 1" L-shaped steel and got the seats mounted. I ended up modifying the seats pretty significantly: narrowed the front of them by 1" and notched the back so I could mount as far back as possible (I love my little 140amp Miller welder--it made all of this possible). I also installed seat heaters while I had the upholstery off. I picked up some hog-ring pliers and a bunch of hog rings to reattach the upholstery. Lastly, as you see in the pics, I picked up some 3" Cobra patches and plan to sew them over the "5" logo (in these pics they're temporarily attached with double-sided tape):
My MOMO "Champion" steering wheel mounted with Breeze's quick release hub are shown below. Also, I covered the MOMO logo in the center of the bub with a nice Cobra emblem I picked up at Finishline:

Did you put your seat heaters between the cloth and foam or under the foam? The seats look great. Can't even tell they've been modified.
Good to see others with "nests" under their dash. I've been dealing with mine for weeks. I'm getting tired of wiring so I'm expanding the foot box near the gas pedal today. I feel like Hoofa. Scissor jack anyone??

That's some fine work you're doing there -- congrats on the progress.
Make sure you get some serious UV protectant on those seats. I did mine, but even so they look terrible after three years -- very faded. The only time they are out is when I'm driving; the car is in a windowless garage the rest of the time. But still, they have become an embarrassment to the rest of the car. Do whatever you can to prevent or delay the same thing happening to you!
Cheers, John

Hi Guys--thanks for all the great comments. Let me try to answer your questions:
Five'n John: I can't remember where I picked up the patches...They weren't too difficult to find with google. I put my seat heaters between the cloth and foam for maximum heating effect...Hopefully they're not too hot!
ntrudelle: The shifter is a B&M short throw unit that was on my donor transimission. It has a nice one-peace stainless handle and some sort of aftermarket shift knob. I plan to get the shift knob and handle chromed to match the Lokar e-brake handle. As shown in the pic, I plan on using the black rubber boot with stainless ring once its all carpeted....It should be a nice clean look.
