Looking for ideas to build a behind-seat storage shelf or cubby. I have been driving around a excalibur roadster and have found the behind-seat storage area super-handy.
Breeze is a good choice. If you are looking for something a little smaller you might try Darkwater Customs. I used the Darkwater solution and modified it to hold my radio.
Or do you mean a shelf like the one J Persons did and I copied. I like the space to stash a coat or whatever. Here is a link that shows his. I don't have any pics of mine yet.
If you are talking about a full width area behind the seats here is what Thierry "mydream" did on his Mk3:

Here's one of mine after it was completed. I also incorporated a map pocket on the back wall and the fire extinguisher. I should have copyrighted this mod.
I still have a bug and can't upload any new pictures, but this shows what I did.
I moved the bulkhead back the maximum I could, added a hoop there to connect the aluminum panel (cut from the back of the cockpit piece), added another hoop at the front, removed the straight piece FFR had there, added some braces to attach the shoulder harness just below body level and modified the front of what would have been the upper trunk floor to have access panels into that area. I also have a full width roll bar so the entire front of the opening is unobstructed (except for the seats).

Driving a car like this is about as much fun as you can have with your clothes on.
I did mine like J Persons except I left the square tube in the center. You can see that tube in the second MP Tech pic. So I have a full height opening but w/ that tube across it. It isn't really a problem and is actually kind of helpfull when you jam a jacket in there as it helps it stay in place.

I just created my own hinged cover for a hole I cut out. I put some 3M Carbon Fiber covering material on the cover to make it look nice. Here it is before carpeting. I used the breeze divider inside the trunk so that the cubby has its own dimensions and things you put in there don't bounce around the whole trunk.
And here it is in the finished car (not painted, but car is finished)
